My Mama’s Crunchy Kiwi Chicken Salad.

Whew, this land of cool breezes has turned hot and muggy on me!  The last thing I wanted to do today was turn on the oven or stove to make dinner, so I decided to make my mom’s chicken salad recipe.  It’s so yummy…cool, salty, sweet, and crunchy.  And, I used low fat versions of the mayo and sour cream, so it was even healthy!  And, it’s super quick and easy, too.

My Mama’s Crunchy Kiwi Chicken Salad

3 cups cooked cubed chicken (rotisserie is fine)

1 cup sliced celery

1/2 cup sliced water chestnuts

1/2 cup sliced green olives

2 tbsp chopped green onions

1 cup seedless grapes, halved.

1 cup cooked small pasta (like ditalini or shells)

1/2 cup mayo (I used low fat)

1/2 cup sour cream (I used low fat)

Salt & pepper to taste

Mix the ingredients together and refrigerate.  Just before serving, garnish with fresh pineapple, strawberries, and kiwi slices.
